Bitterballen: A true Amsterdam classic: bitterballen. Crisp, golden and made for sharing, these savoury ragout-filled bites (or their vegetarian cousins) are best enjoyed with a cold beer and a taste of Dutch gezelligheid.

For this guide, we invited designer and artist Floris Schrama - also the husband of Jantien Bass - to illustrate his personal take on the city. His answer? The pigeons. Loved and loathed in equal measure, they shuffle across squares, dart in front of bikes, gobble up stray fries and ruin the best-kept balconies. Flyint rats? Maybe. But also: undeniably Amsterdam.
